Baked Ziti Pasta with Chicken Sausage

1 box of Multi-grain or Whole Wheat Ziti pasta
1 24oz jar of your favorite tomato sauce
2 cup of chicken sausage-medium dice
1cup of low fat italian cheese-shredded
1 cup of green peppers-small diced
1 cup of onion-small diced
1 cup of mushroom-thinly sliced
2 clove garlic-minced
2 tablespoons Extra Virgin Olive Oil
1 teaspoon Kosher salt
1/2 teaspoon of freshly cracked black pepper

Pre-heat oven 375 degrees

Okay, now we are ready to start….

Let’s start with our Pasta. Place a large pot of water on high and bring to a boil. Follow the directions on the pasta box for proper cooking time.

While your pasta is cooking, place a large sauté pan or skillet on medium heat add in 1 tablespoon of olive oil and the chicken sausage. Cook the sausage until browned on all sides. When the sausage is done remove for pan and set aside. In the same pan add in the remaining olive oil, onions, mushrooms, salt, pepper and bell peppers and sauté until soften.


Chef Huda’s Tip: When your pasta is done, do not rinse it. It is always best to take your pasta right from the pasta water to the sauce to insure pasta dish happiness!

Now, let’s make something Pretty and Delicious!

Once, the your pasta is done, mix the sausage, veggies, pasta and sauce together and place in a oven safe dishes. Sprinkle the cheese on evenly on top and place in oven for 15 minutes on 375 degrees. Cook until cheese is golden brown. When you pasta is done, let it set for 3-5 minutes before serving. Now, all you have to do is Enjoy!

Garlic Shrimp
1 pound large or jumbo shrimp-peeled and deveined
2 tablespoons of garlic-minced
2 tablespoons extra virgin olive oil
¼ teaspoon kosher salt
¼ teaspoon ground black pepper

Brown Butter Sauce
3 tablespoons unsalted butter
2 fresh scallions-thinly sliced
¼ teaspoon kosher salt
¼ teaspoon ground black pepper

Aged Cheddar Grits
1 cup grits-quick cooking
3/4 cup grated aged sharp cheddar cheese-grated
1/2 cup 2% low-fat milk
2 cup water
4 tablespoons unsalted butter
¼ teaspoon kosher salt
¼ teaspoon ground black pepper

Let’s make something “Pretty and Delicious”!

First start with your aged cheddar grits. Follow the direction on the package of quick cooking grits. Stir in cheese, salt, pepper and finish with butter. Stir until creamy. Remove from heat when done.

Chef Huda Cooking Tip: When making grits stir frequently to insure smooth and creamy grits.

Now for your Garlic Shrimp and Brown butter sauce. Place a large skillet over medium high heat, add in oil and garlic. In a separate bowl toss shrimp with salt and pepper. Add shrimp to pan and cook for less than 1 minute on each side until the shrimp begin to turn pink and are opaque in the middle.

Chef Huda’s Cooking Tip: Do not over cook the shrimp they will turn pink and begin to curl when they are done.

Once the shrimp are done, remove from pan and set aside. Add in butter, scallions and cracked black pepper and stir. Lets cook until butter begin to turn brown.

Now, let’s plate something Pretty and Delicious. Spoon creamy Aged cheddar grits on to plate or bowl then stack garlic shrimp on top and spoon Brown Butter Sauce over shrimp.

Stuffed Chicken Florentine with Tomato Ragu

Chicken Florentine
1 pound boneless chicken breast-skinless-sliced in half
1 clove of garlic-minced
1/2 cup of spinach-chopped
1/2 cup of mozzarella cheese-shredded
1 tablespoons extra virgin olive oil
1 teaspoon kosher salt

Tomato Ragu
4 cups cherry tomatoes-halved
2 cloves of garlic-minced
1 cup of onion-finely chopped
1/2 cup extra virgin olive oil
1/2 teaspoon kosher salt
1 teaspoon of dried thyme
1/2 teaspoon sugar
1/2 teaspoon of freshly cracked black pepper

*Pre-heat oven to 350 degrees

Now, let’s make something Pretty and Delicious!

Chicken Florentine - In a large bowl mix together the spinach, garlic, mozzarella cheese, olive oil and a pinch of salt and set aside. On a clean cutting board slice your chicken breast in half lengthwise. Stuff each chicken breast with the spinach mixture and tightly roll up your chicken breast. Once the chicken is rolled place in a greased shallow baking pan and place in oven for 15-20 minutes depending on size of the chicken breast. Let cook until golden brown. Once, the chicken is fully cooked, remove from pan and allow to rest for 3-5 minutes before you slice it.

Chef Huda’s Cooking Tips- Using toothpicks or skewers to help hold the chicken together during the cooking process may be very helpful.

Tomato Ragu - Heat a large sauce pan over medium high heat. Add in olive oil, onions, garlic and cook until soft. Then add in tomatoes, thyme, salt sugar, pepper and stir. Cover and let cook for 10-15 minutes over low heat. Once, your tomato mixture cooks down stir and taste.

1/2 cup roasted red peppers-store brought (12oz)-thin slices
1/2 cup spinach-rough chopped
1/4 of cup of mozzarella cheese-shredded
1 cup of milk
1 tablespoons Extra Virgin Olive Oil
1 teaspoon Kosher salt
1/2 teaspoon of freshly cracked black pepper

~Pre-heat your oven to 350 degrees~

Okay, now we are ready to start….

Let’s start with our Frittata. Place a medium non-stick skillet on medium heat.

Add in oil, roasted red peppers, spinach, salt and black pepper. Whisk together eggs and milk then add to pan. Sprinkle mozzarella cheese on top and place in oven. Let cook for around 10 minutes until golden brown.

2 cans of black-eyed peas-store brought (15oz cans)
1 large tomato-small dice
1/2 cup of red onion-small dice
1 medium red bell pepper-small dice
1 medium green bell pepper-small dice
3 tablespoons balsamic vinegar

Let’s start with our Black eyed peas. Start by draining each can of black-eyed peas. Now, let’s make something Pretty and Delicious. In a large bowl combine all of your ingredients. Toss until everything is friendly, then taste. Then cover and refrigerator your salad for at least 1 hour before serving.

1 1/2 cup of Feta Cheese-Crumble
1 clove garlic-minced
4 tablespoons Extra Virgin Olive Oil
1 teaspoon Kosher salt
1/2 teaspoon of freshly cracked black pepper

Okay, now we are ready to start….

1 3/4 cups of couscous
2 cups chicken stock or water
1 1/2 cups of broccoli - rough chopped
1 large red bell peppers - thinly sliced
2 large orange bell peppers - thinly sliced
1 1/2 cups of Zucchini - sliced
3 tablespoons extra virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon of freshly ground black pepper

Let’s start with our couscous. Place the water or stock in a medium saucepan and bring to a boil. Once the water boils add in the couscous, cover and remove from heat. Let set for about 5 minutes.

Now, for our veggies. In a large sauté pan over medium-high heat add in the olive oil, bell peppers, broccoli, zucchini, salt and pepper and cook until tender (about 3-5 minutes). Once your veggies are done. Use a fork to fluff your couscous. Use a slotted spoon to remove the veggies without liquid from the pan. Add the veggies to the couscous and lightly toss and then serve. Now, all you have to do is Enjoy!

2 1/2 pounds Yukon Gold potatoes-Cut into 1/2-inch rounds
1/4 cup Extra Virgin Olive Oil

*Preheat oven to 425 degrees

Start with washing and drying your potatoes, then cut potatoes into 1-inch rounds. In a medium bowl toss the potatoes, olive oil, garlic salt, parsley and pepper until glossy.

Baked for 15 to 20 minutes until tender in the middle with a light crisp on the outside. Once your Roasted Potatoes Rounds are done, remove from oven. Sprinkle with additional salt and pepper, if needed. Plate your Roasted Potatoes Rounds. Now all you have to do is Enjoy!

Let's Cook- Italian Turkey Meatballs

Italian Turkey Meatballs

Turkey Meatballs

1 lb Lean Ground Turkey
2 clove Garlic-Minced
1/3 cup Onion-Chopped
1/2 cup Bread crumbs-Plain or Flavored
1/4 cup Parmesan cheese-Grated
2 Large Eggs
1/2 tablespoon Extra Virgin olive oil
1 teaspoon Italian seasoning
1 teaspoon Kosher salt
1/2 teaspoon of Black Pepper

Let get Started

Okay, now we are ready to start....

Place in a Large bowl the Lean ground turkey, onion, garlic, bread crumbs, parmesan cheese, salt, pepper, garlic and Italian seasoning in a bowl. Quickly whip the 2 eggs together in a separated bowl then pour into the Large bowl with everything else and mix, until all of your ingredients are friendly.

Chef Huda’s Tip: When mixing everything you can use your hands. I like being hands on!

Use a Tablespoon to loosely measure out the mixture (Large scoops). Place the mixture in your hand and roll it into a ball and then set aside for cooking. Repeat this process until the desired amount of Turkey Meatballs are made. Place a large skillet over medium heat. Grizzle the pan with Extra Virgin Olive Oil. Place the Turkey Meatballs in the skillet.

Chef Huda Cooking Tip: Please don't crowd them in the pan. If the pan is too crowded the Meatballs will steam instead of brown.

Turn the Turkey Meatballs every couple minutes to brown on all sides. When the Turkey Meatballs are done, let them rest for 3-5 minutes. If the meatballs are extra large finish them in the oven.

Now let’s make something Pretty and Delicious! These meatballs are delicious all by themselves, but you can serve them with pasta, in a sub, however you like. Now, all you have to do is Enjoy!

Campanelle Pasta-Vegetarian and Delicious

1 Box of Campanelle-1 LB Box
2 cups Fresh Asparagus - Cut into 1-inch pieces
1 1/2 cup of Cherry tomatoes - Cut in half
4 cloves Garlic - Minced
3 tablespoons Extra Virgin Olive Oil
1 teaspoon Kosher salt
1/2 teaspoon of Freshly Cracked Black Pepper

Okay, now we are ready to start!

Let’s start with our pasta. Place a large pot of water on high and bring to a boil. Follow the direction on the pasta box for proper cooking time. While your pasta is cooking, place a large sauté pan or skillet on medium heat add in 1 tablespoon of olive oil. Add the garlic, asparagus, cherry tomatoes and a pinch of salt then stir. Cook until the asparagus is tender and your tomatoes start to cook down.

Chef Huda’s Tip: When your pasta is done, do not rinse it. It is always best to take your pasta right from the pasta water to the sauce to insure pasta dish happiness!

Now let’s make something Pretty and Delicious! Once the Pasta is done add it into the pan with your asparagus and tomato mixture. Add in remaining olive oil and toss. Now is the perfect time to add more salt, if needed. Plate on a large bowl and sprinkle with Freshly cracked Black Pepper and a a lite drizzle of Extra Virgin Olive Oil. Now, all you have to do is Enjoy!

Let's Cook- Pesto Chicken Bruschetta


Pesto Chicken Bruschetta

1 pound Boneless Chicken breast - Cut into strips or 1-inch cubes
1 cups of Baby Heirloom Tomatoes or Cherry tomatoes-Cut in half or slices
1 cup of Pesto sauce-Store Bought
1/2 cup of Parmesan Cheese-Shredded
1 Multi-grain French Baguette-Sliced
1/2 cup of Extra Virgin Olive Oil
1 teaspoon Kosher Salt
1/2 teaspoon Fresh Cracked Black Pepper

Okay, now we are ready to start!

Let’s start with our Pesto Chicken. Place a Large sauté pan or skillet on medium heat add in 1 tablespoon of olive oil. Cut and season your chicken breast with salt and pepper and place into the hot pan. Cook chicken until golden brown on all sides. Once the chicken is fully cooked, remove it from pan. In a large bowl toss your chicken with your pesto sauce. Slice your Multi-grain French baguette into 1/2 inch slices (on a Diagonal) and brush with Olive oil. Place into a hot clean pan or in your oven, toast until golden brown on both sides.

Now let’s make something Pretty and Delicious! Start your plating with placing your toasted Mutli-grain bread on the plate first then stack with your Pesto chicken then your Baby Heirloom Tomatoes and finally garnish with Parmesan cheese. Finish by drizzling a little Extra Virgin Olive Oil and Cracked Black pepper. Now all you have to do is Enjoy!

Homemade Chunky Tomato & Basil Soup Served With Feta and Parmesan Pesto Crostinis

Homemade Chunky Tomato & Basil Soup

2 tablespoons of Extra Virgin Olive Oil
1 medium Onion-Small Diced
3 cloves of Garlic-Minced
2 tablespoons All Purpose Flour
4 cups of Tomatoes-Large Diced
3 1/2 cups Vegetable broth
1/4 cup of Fresh Basil Leaves (4 to 6 Leaves)-Roughly chopped
1/4 teaspoon Kosher Salt
1/2 teaspoon Sugar
1/2 teaspoon Black Pepper-Freshly cracked

Feta and Parmesan Pesto Crostinis
1 French Baguette (White or Multigrain)-Thinly Sliced
1 tablespoon Extra Virgin Olive Oil
1/4 cup Pesto-store bought
1/2 cup Feta cheese-Crumbled
1/2 cup Parmesan Cheese-Shredded

Now, let’s make something Pretty and Delicious!

Let’s start with our Homemade Chunky Tomato & Basil Soup. In a large saucepan, over medium heat add in Extra Virgin Olive Oil then sauté the onions and garlic. Once the onions and garlic are cook down add in the flour the stir frequently. Allow the Onions, Garlic and Flour to get friendly (let this mixture cook together for a 1-2 minutes). Add in vegetable stock, tomatoes, salt, sugar, pepper and stir. Let everything simmer for 15 minutes. Once everything is cooked add in basil and taste. Add in more salt, sugar or pepper, if needed.

~Chef Huda Note: I like my soup Hearty and Chunky. If you want a smoother consistence you can blend the soup, but be careful not to burn yourself.

Now, let’s get started on our Feta and Parmesan Pesto Crostinis. Place line up your sliced french bread on a baking sheet and brush one side with olive oil then flip. Spread pesto on the other side and sprinkle with goat cheese on half of your slices and parmesan cheese on the other half. Broil on high until the cheese starts to melt and the breads edges are golden brown.

Now let’s make something Pretty and Delicious! Ladle your Homemade Chunky Tomato & Basil Soup into a bowl and serve with both the Feta and Parmesan Pesto Crostinis on the side. Now all you have to do is Enjoy!
