Let's Cook- Garlic Roasted Sweet Potatoes

Garlic Roasted Sweet Potatoes Drizzled With Garlic Butter

Ingredients-

Roasted Sweet Potatoes
2 1/2 pounds Sweet potatoes-Cut into 1/2-inch-Strips or Wedges
3 large Garlic cloves-Finely Minced
1/4 cup Extra Virgin Olive Oil
3/4 teaspoon Salt
1/2 teaspoon Black pepper
Please note: You may need more salt and pepper depending on your taste.
Garlic Butter
1/2 cup of Butter
1/2 teaspoon Garlic powder
1/4 cup of Parsley-Roughly chopped

*Preheat oven to 425 degrees

Let’s get Started.

Wait…Please, Wash your Hands.

Okay, now we are ready to start!

Now, let’s make something Pretty and Delicious.

Start with washing and drying your Sweet potatoes, then cut potatoes into 1-inch wedges-lengthwise. Place the Sweet potatoes in a large bowl drizzle with olive oil, then add in garlic, salt and pepper. Toss the Sweet potatoes until glossy. Place the seasoned Sweet potatoes in a shallow roasting pan and place in the oven. Baked for 20 to 30 minutes until tender. Flip the sweet potatoes with a spatula for even browning. Now let start on our Garlic Butter. Melt your butter in a small bowl then add in garlic powder and parsley, give it a quick mix and you are ready to go. Once your Garlic Roasted Sweet Potatoes are done, remove from oven. Sprinkle with additional salt and pepper, if needed. Plate your Garlic Roasted Sweet Potatoes and then drizzle your homemade Garlic Butter over your Garlic Roasted Sweet Potatoes. Now all you have to do is Enjoy!

    @cassburt88 – try a little lower oven. I usually do my sweet potato fries in olive oil in a 400 – 425 oven for 20-25 min and they come out great. Make sure you check them and give them a flip in the last 5-8 min.

    Ugh, this post is a day late! I *attempted* to make sweet potato fries last night and the outcome was less than impressive! First off, I had the HARDEST time cutting up the sweet potatos; they were super hard! So needless to say, my "fries" were all different shapes and sizes. I coated them in salt, pepper, and olive oil and put them in a 450 degree oven. Fifteen minutes later, I had burnt sweet potatoes! And I do mean burnt….BLACK….not even cajun! I couldn't begin to think of what went wrong. Maybe cause my "fries" weren't uniform….
