Let's Cook!- Warm Asparagus, Tomato & Feta Salad

1 pound Fresh Asparagus-Cut into 1 1/2 inch pieces
2 cups of Baby Heirloom Tomatoes or Cherry tomatoes-Cut in half
1/2 cup of Feta Cheese-Crumble
2 tablespoons Water
1 Multi-grain French Baguette-Sliced
1/2 cup of Extra Virgin Olive Oil
1/2 teaspoon Kosher Salt
1/2 teaspoon Fresh Cracked Black Pepper

Let’s get Started…

Wait…Please, Wash your Hands..

Okay, now we are ready to start!

Let’s start with our Asparagus. Clean and cut your Asparagus on a diagonal into 1 1/2 inches (in length) pieces. Place in a medium saucepan over medium-high with 2 tablespoons of water. Cover and steam the Asparagus for 4-6 minutes until slightly tender. Once tender drain any leftover water. Add in Baby Heirloom tomatoes, Olive Oil, salt and pepper. Stir and cook until tomatoes are warm then add in Feta cheese. Slice your Multi-grain French baguette into 1/2 inch slices (on a Diagonal) and brush with Olive oil. Place into a hot clean pan or in your oven, toast until golden brown on both sides.

Now let’s make something Pretty and Delicious! Once the asparagus mixture is done. Start your plating with placing your toasted Mutli-grain bread on the plate first then stack with your Warm Asparagus, Tomato and Feta Salad. Finish by drizzling a little Extra Virgin Olive Oil and Cracked Black pepper. Now all you have to do is Enjoy!

    Looks delish. What happened to Kinky Shea? She is totally awesome!! I miss the fitness info she provided. Glad to see that fairly healthy recipes continue to be featured, but with obesity/overweight issues being such an issue among black women (esp given the hair obsession), fitness info was nice in balancing things out.
