Creamy Asparagus Soup-Delicious & Vegan Friendly

Creamy Asparagus Soup
1 pound Fresh Asparagus-Cut into 1 1/2 inch pieces
4 cloves Garlic–Minced
3 tablespoons of Extra Virgin Olive Oil
1/2 cups of Water
1/2 teaspoon Kosher Salt
1/4 teaspoon of Black Pepper-Fresh cracked

Let’s get started.

Wait…Please, Wash your Hands.

Now, let’s make something Pretty and Delicious!

Let’s start our Creamy Asparagus Soup. In a large saucepan, over medium heat add in Extra Virgin Olive oil and garlic, cook until garlic starts to brown. Add in the Asparagus and water and then cover. Cook until the Asparagus is tender. Once the asparagus mixture is done. Pour into Blender and puree until a light and smooth consistency. Taste and add in more salt or pepper, if needed.

~Chef Huda Note: When blending hot items or liquids please be careful not to burn yourself.

Ladle your Creamy Asparagus Soup into a bowl. To finish drizzle a little Extra Virgin Olive Oil and some Cracked Black pepper before serving. Now all you have to do is Enjoy!

    Sounds yummy. Here are two more for ya:

    "Cream" of Broccoli Soup

    1 Head of Cauliflower (cut into pieces)
    1 Broccoli Crown (chopped)
    5-6 Garlic Cloves
    Salt and Pepper to taste
    1 Bay leaf (optional)
    Onion Powder (optional)
    Garlic Poweder (optional)

    Using water (or vegetable stock), boil the cauliflower in a large pot with 5-6 cloves of garlic. Season with salt, pepper, and a drizzle of olive oil. Cook until really tender. Then throw everything into a blender, adding more water (or stock) until you have the creamy soup consistency that you desire.

    Pour the soup back into the pot and stir in your broccoli. Here is where I added a bay leaf, as well as some onion and garlic powder, but you can do whatever works for your taste buds. Cook on low, until broccoli is tender. Then enjoy!

    Recipe II: Cauliflower soup

    This was my attempt at recreating a soup I'd had at a local restaurant, that has since closed. It starts just like the "cream" of broccoli soup. However, once the cauliflower is done, only blend half of it in the blender with water (or vegetable stock), adding enough liquid to bring it to the consistency that you desire.

    Mash the cauliflower left in the pot with a potato masher. Then, pour the pureed cauliflower back into the pot and stir all together.

    Serve garnished with sliced scallions, slivered almonds, and diced dates. I know it sounds weird, but this stuff tastes great. Happy dining!

    I concur!

    My only concern with this is the smell of my urine. My husband doesn't notice it himself but I get self conscious.

    I will give it a try, though.
