Recipe by Chef Huda
1 Box of Campanelle-1 LB Box
2 cups Fresh Asparagus – Cut into 1-inch pieces
1 1/2 cup of Cherry tomatoes – Cut in half
4 cloves Garlic – Minced
3 tablespoons Extra Virgin Olive Oil
1 teaspoon Kosher salt
1/2 teaspoon of Freshly Cracked Black Pepper
Let’s get Started
Wait…Please, Wash your Hands.
Okay, now we are ready to start!
Let’s start with our pasta. Place a large pot of water on high and bring to a boil. Follow the direction on the pasta box for proper cooking time. While your pasta is cooking, place a large sauté pan or skillet on medium heat add in 1 tablespoon of olive oil. Add the garlic, asparagus, cherry tomatoes and a pinch of salt then stir. Cook until the asparagus is tender and your tomatoes start to cook down.
Chef Huda’s Tip: When your pasta is done, do not rinse it. It is always best to take your pasta right from the pasta water to the sauce to insure pasta dish happiness!
Now let’s make something Pretty and Delicious! Once the Pasta is done add it into the pan with your asparagus and tomato mixture. Add in remaining olive oil and toss. Now is the perfect time to add more salt, if needed. Plate on a large bowl and sprinkle with Freshly cracked Black Pepper and a a lite drizzle of Extra Virgin Olive Oil. Now, all you have to do is Enjoy!
Chef Huda’s Healthy Tip: Tomatoes are an amazing fruit. Tomatoes are high in Vitamin A, C, beta-carotene and antioxidants. Vitamin C helps promote healthy hair growth.

I just made this wonderful recipe. So tasty, I skipped my usual dose of parmesan cheese 🙂 This one's a keeper!
Thank you!!!! A vegetarian recipe!!!!! And this look delicious!!!!! Keep it coming!!!
Mmmm, can't wait to try it. I love the vegetarian recipes…more please 🙂
This looks yummy. I'm not a fan of tomatoes though (I love ketchup, go figure). Any suggestions on another substitute veggie?
Nice recipe, very straightforward and seems easy. I'm trying to incorporate more vegetarian dishes into my diet.
Ohh it looks very good… today I lunched pasta with cheese and yesterday the same thing but with tuna, little pieces od bread, bathed with extra virgin oil and black vinegar and marjoram, an italian recipe of my aunt. Should test it.
Yuummmmm! I think I may try to make this over the weekend.
This dish would be amazing with an adiitional teaspoon of Italian Seasoning ( a blend of herbs)! I will be trying that out!
Thank you for presenting so many Vegetarian options. Today is my 7 year Veggieversary
