
Penne Pasta with Roasted Red Peppers and Feta Cheese
Recipe by Chef Huda
1 box of Multi-grain or Whole Wheat Penne pasta
3 cups Roasted red bell peppers-store brought (24oz)- slice
1 1/2 cup of Feta Cheese-Crumble
1 clove garlic-minced
4 tablespoons Extra Virgin Olive Oil
1 teaspoon Kosher salt
1/2 teaspoon of freshly cracked black pepper

Okay, now we are ready to start….
Let’s
start with our Pasta. Place a large pot of water on high and bring to a
boil. Follow the directions on the pasta box for proper cooking time.

your pasta is cooking, place a large sauté pan or skillet on medium
heat add in 2 tablespoon of olive oil and garlic. Let cook until the
garlic is soft. Add in the sliced roasted red bell peppers and lightly
sauté. Then set aside.

Chef Huda Tip: The roasted pepper are already cooked so you are just heating and flavoring them at this point.

Now,
let’s make something Pretty and Delicious! Once the Pasta is done add
it into the pan with your garlic and roasted red peppers add in olive
oil, salt and pepper and stir. Plate on a large bowl and sprinkle Feta
cheese on top and toss. Now, all you have to do is Enjoy!

This is ALWAYS my go to quick dinner!!…minus the cheese but it's amazing!!! Adding olives and a little seared spinach takes it over the top too!
