1. Pepita Guacamole

Pumpkin seeds

This tasty, nutrient-packed guacamole dish is as easy as putting all the ingredients in a bowl and combining them with a fork. And… you’re done!

Your pepita guacamole will be soft, crunchy, and spicy thanks to its avocado, roasted and chopped pumpkin seeds (pepitas), onion, cilantro, and jalapeno. A little fresh lime juice, freshly ground black pepper, and kosher salt help to bring all its flavors together.

2. Muesli

Prep. Time: 10 minutes

Oats are a good source of zinc, as are walnuts and sunflower seeds. This recipe has them all, along with other vegan foods with zinc, including wheat germ and wheat bran. Brown sugar and raisins are added to the mix for sweetness and all you have to do is store it in the fridge until you are ready to dive in!

Yes, there are many brands of almond butter for you to choose from on the supermarket shelves – but, wouldn’t it be nice to make your own with ingredients you choose and control.

The really wonderful thing about this almond butter is that it’s made with just five simple ingredients – raw almonds, ground cinnamon, salt, vanilla extract, and either maple syrup or honey. That’s it – no preservatives and no additives.

Roast your almonds then blend them until smooth and creamy before adding your other ingredients. Use your almond butter as a topping for toast or an ingredient in your smoothie or any way you like!

4. Jamaican-Style Chickpea Curry

This Jamaican-style chickpea curry is loaded with herbs and spices for tons of flavor. Chickpeas give you appreciable amounts of zinc, iron, and manganese – all of which are hair-healthy minerals.

To make this dish, start by cooking onions, garlic, ginger, paprika, curry powder, and thyme in coconut oil. 6. Five Bean Casserole

Eat your beans! Why? because they are packed with zinc for general health and well-being, of course! The five beans you’ll need for this recipe are butter beans, lima beans, chickpeas (aka garbanzo beans), kidney beans, and baked beans. You will also need bacon and it’s good to know pork is a source of zinc, too.

Start by frying, draining, and crumbling your bacon then sauteing onion and adding in some brown sugar, mustard, garlic powder, salt, and vinegar. Lastly, add the beans and bake. You’re done – a delicious sweet and sour bean casserole that’s great on its own or paired with your favorite veggies and starch.
